Guacamole

I never really liked guacamole much until I learned to make it. Now, it is a regular condiment in our diet. I like my guacamole creamy smooth, with a hint of lime, and with touch of salt. Here's a basic recipe:

  • scant 1/4 cup of diced yellow onion
  • 1/4 cup diced tomato
  • 1 large clove of garlic, minced
  • 2 ripe avocados
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon pepper
  • 1/2 teaspoon salt
  • 2 tablespoons lime juice
I use a food processor when I want the guacamole really smooth. When I'm feeling that slightly chunky is ok, I'll use my Tupperware Quick Chef.

Process the onion and tomato until finely chopped. Add rest of ingredients and process until smooth. Add additional salt and lime to taste.

I have found the same thing - homemade guacamole is awesome - store bought not for me!

One thing I'd suggest is that if you're making fresh salsa just toss some of that in w/ the avocados - makes for an awesome guacamole :)
