Chocolate Peanut Clusters (Dairy Free)

I love chocolate peanut clusters. Unfortunately, my dad had brought me some just about the time we were figuring out that Madelynn might be allergic to dairy, and they have dairy in them. Well, it occurred to me the other day that I might be able to make them. So, I tried it and found out that not only could I make them, but they are super easy to make. Yea!


Ingredients:

12 oz bag of Guittard Semi-Sweet Chocolate Chips
1 Tbl shortening
1 tsp vanilla
12 oz can Planters Party Peanuts

Directions:

1. Melt chocolate chips and shortening in a heavy bottom pan over low heat. Stir constantly so not to scorch chocolate.

2. Once chocolate is completely melted, add vanilla and mix until smooth again.*

3. Add in peanuts. Stir until all peanuts are evenly coated.

4. Drop mixture by teaspoonfuls onto wax paper. Let cool until set. You may speed this process up by placing them in the refrigerator, if desired.

*Note: Melted chocolate may seize when liquid is added to it. I did not experience that with Guittard brand chocolate chips, however, another brand did seize. If this happens, you can bring it back to consistency by adding a little bit of shortening and remelting it. It took about 3 tablespoons to correct mine.

DISCLAIMER: Trace dairy may be found in this recipe as the chocolate chips are made in a facility that also processes dairy items.

Those sound good. I wonder if I bought salt-free peanuts what the sodium content would be - I'll have to check that out.
