Menu Plan Monday


I used to Menu Plan Monday quite a while ago. Since I'm trying to plan my menus again, I thought I would start participating again. My menu planning is very flexible. I go more for a list of things we'll eat this week rather than planning what meal will go on what day, unless I have other plans that require certain planning in order to get dinner on the table. Days I expect to be gone all day, for example, might do better as a crock pot day.

My menus are almost exclusively dairy free, or easily converted to dairy free. If I link to a recipe that has dairy in it, I intend to either omit the dairy (ie. skip the sprinkling of cheese on top) or substitute a dairy free alternative. I use Enriched Rice Dream Original in place of milk, when necessary. For butter, I use Earth Balance Buttery Spread in a red container because it is both dairy and soy free. My menus are NOT soy free. I have a mild soy allergy so I do limit it as much as I can; however, I find not eliminating it altogether helps me maintain my dairy free diet, which is crucial.

Here's my dinner plan this week:

Monday: Slow Cooker Beef Stew, Homemade Bread

Tuesday: Popcorn Chicken, Homemade JoJos, Corn on the Cob

Wednesday: General Tao Chicken, Rice, Broccoli & Cauliflower

Thursday: Burritos

Friday: Shrimp Scampi, WW Linguine, Homemade Pesto Sauce (omit Parmesan)

Saturday: Meatloaf, Rice Pilaf, Peas

Sunday: Salsa Chicken and Black Bean Soup, Tortilla Chips

I recently happened upon your blog, probably through some homeschool circle.

Just curious as to why you avoid dairy? Allergy? Just wondering. My dd has an anaphylactic allergy to all dairy, but I don't run into anyone else with an allergy very often.
