Ever since I received my new camera, I've been having more difficulty posting on my blog. I figured out that part of the problem is that I like to use a lot of photos. The file size for each photo taken with my new camera is so large, which is great for printing, that I have to do a bunch of editing before I can put them on the blog. I don't want to run out of space too quickly.
To help me post more frequently, I came up with stole the idea of taking just one photo a day that represents something from our day. I didn't think of this until the 2nd of January, so I'll start there.
Recently, my husband decided that he wanted to try eating strictly vegetarian for 40 days. He says that he feels better when he eats that way. I feel starved without meat. It doesn't matter how much I eat, nor does the protein content of the meal matter. I once tried to see how far I could get on vegetarian and made it six meals. At that point, I was feeling utterly exhausted and even sickly, like I was fighting a chronic illness.
He told me I didn't have to change how I cooked for this. He would eat whatever part of the meal that he could, or come up with something else if the meal was something he couldn't make work (ie. chicken soup). He bought black beans, chick peas, oatmeal, granola, and quinoa to add protein to his diet. Regardless, it really is easier if I can just find some vegetarian-friendly meals to cook so I'm not having to share the kitchen. (I don't share the kitchen well...they just get in the way.)
Anyway, our first vegetarian-friendly meal was grilled vegetable and black bean tostadas. The only alterations I had to do was cook the beans without their usual bacon for flavoring and brown some ground beef for the rest of us. Well, I also used the broiler instead of the grill. I found out that grilled red onions are amazing and that pasilla chilies are too hot. They came out pretty good and will be made again.
